Popular among Baylor College students for its dance hall in the back of the restaurant, Aztec operated until 1948, when a revolutionary new “pie” made of Italian ingredients and cheese caught the family’s attention. Castillo and his children took to this innovative new delicacy for nearly 35 years, when his son, Sam, opened La Fiesta in a return to his family’s traditions and roots.
